In the Mail app, go to Mail -> Preferences in the top screen menu.
Then click on the 'Accounts' tab inside the preferences menu. In the Outgoing mail Server section, there is a dropdown for SMTP servers. Click on the last one that says Edit SMTP Server List.
Then you can click on the server name and update it.
